Still Standing My Ground

Stress is still a nemesis in my life. Work pressures have escalated, and I was in a car accident 2 Thursdays ago. I have not received a definite answer as to whether MamaKia will be fixed or totaled. In the meantime, I am tweaking my low-carb regime and exploring vocational options that are closer to home.

It is frustrating to have experienced something that worked beautifully only to have it shipwreck in a crisis—and not because I stopped doing what I knew to do. The best news is that my weight is headed in the right direction again, even when the scale gets stuck on one number for a series of days.

I have not signed up for deprivation. Except for an occasional reset through intermittent fasting, I am still enjoying the adventurous low-carb fare.

I spent my Sunday afternoon in the Caldwell vineyard country. The Orchard House patio offered a pleasant mix of shade, breeze, and sunshine. Music from the ’70s had me oscillating in my chair. There was even a Conversation Jar should I get tired of talking to myself.

I have been a widow for over eight months now. I rejoice that I have made it this far! Grief, the stress of starting a new vocation, and the resulting sedentariness of life in a cubicle have undoubtedly caused havoc with my equilibrium. After losing 41 pounds, I am still creatively low-carbing, although I have mysteriously gained weight. It is incredible how a crisis can disrupt success.

I recently began seeing a holistic chiropractor, Dr. Rosie of Main Health Solutions. Dr. Rosie is a proponent of the ketogenic diet and natural healing. She agrees that the sudden changes in my life have created a disturbance. Much like a hard drive malfunctioning when its directory branches are broken, the body loses its balance when the nervous system misfires or fails to communicate properly. 

Truthfully, my back has been out of whack since the delivery of my youngest son—18 years ago. At 60, I have noticed that my posture is not where it should be. Xrays show that I have a bit of degeneration where I had my last epidural. 

I am looking for a life alignment, not just a repositioning of my physicality. 

This said I am continuing to do what I know to do. I believe that I will find my sure footing again. Cheryl A. Barrett wrote, “Time has no boundaries in matters of the heart.” Perhaps another revelation resonates with Shauna L Hoey's thoughts, “Heartache purged layers of baggage I didn’t know I carried. Gifts hide under the layers of grief.”

Reset


Understandably, these last four months have introduced me to emotions and challenges I have never faced. On June 8th, it will have been four months since Barry died! I have undoubtedly scaled some new terrain. While time seems to have evaporated, I have made some incredible progress.

Still, there has been discouragement. Since the day after Barry's passing, I vowed to stick to my low-carb/ketogenic lifestyle. I knew it was essential to stay the course and take care of me. I had lost 41 pounds! I was not willing to trash that success. Food could quickly become a pacifier, and I refused to let it.

Despite staying the course though, I began to gain weight. 

Out of necessity, I had abruptly begun a new vocation about five weeks after Barry died. I became a Patient Specialist with a major hospital. I had previous customer service experience but had never worked in the medical field. I had jumped directly into the fire and was enduring a longer commute to boot!

One day, after battling traffic, I pulled into a strip mall, horribly depressed. I felt like a spent, frumpy old woman whose waistband was beginning to choke my spirit. Seeing my reflection in my car's window offered no comfort.

Now, I believe that God is more willing to speak to us than we are eager to listen. (And no, Joyce Behar, I am not mentally ill.) In a still, quieting voice, He nudged me. He reminded me that five things factored into this weight gain.
  1. The stress of Barry dying suddenly and leaving me on my own
  2. Grieving his loss
  3. Being thrust into a sedentary job—in a cubicle—for 8 hours a day
  4. More driving time in rush hour traffic
  5. Not getting enough sleep
I had left a more active position and a commute that was only 10-15 minutes each way. My life had undergone a major rehaul. My operating system was affected. 

So, I countered with positive steps...
  1. Reading the Bible and plugging into peaceful, soothing outlets of strength and hope
  2. Allowing myself to grieve and heal
  3. Utilizing the four flights of stairs to my office, parking my car further away, and doing planks to strengthen my core
  4. Leaving earlier for work to beat the traffic and listening to life-building audiobooks
  5. Prioritizing my time so that I can get more sleep
I AM NOT GIVING UP!

If the pants fit...

This Saturday will mark another first for me. I will be modeling two seasonal outfits at the Nampa, Idaho, Christopher & Banks locationI would have been a reluctant model forty-one-pounds ago. Now, as a 59-year-old realizing the gradual reemergence of a figure, I am jazzed!

Even my mother has lamented the challenge of buying clothes for me. My torso is long and I have an ample rear end. My shoulders and thighs are fuller, while my limbs are an average length. I do not look disproportional, but finding styles that fit and flatter is an undertaking. 

You know the deal. Pants will fit in the hips and derrière, but the legs are too long or wide, or the pants are the perfect length, but the waistline requires a vacuum seal to suck it in. I try on so many styles and sizes that my fitting room resembles a wear-house. Thankfully, Christopher & Banks understands the rest of us.

I learned my fashion sense from my mother's classy style. She has never dressed old. She adores color, design, and accessories. She orchestrates harmony! Regardless of our dissimilar body types, I admire her finesse. There is no shame in dressing like Mom! 

I was eager to attend my fashion show fitting! The mirror revealed ensembles that accentuated the positive and made me look good. I wanted to move—soak up some life!

Weight loss is not the magic wand that turns us into something or someone special. I believe we are already those things and that we need to recognize and love what's inside the package first. I dream thin, so the mirror is beginning to align with how I already see myself.

Fall is my favorite season and I finally have them here in Idaho. For some reason, falling leaves inspire me. They make me want to purge! As Halloween stores are preparing to open, I become goal-ish, not ghoulish.

I put my family on alert regarding purging the garage in 2 weeks. Silly me, but I would actually like to park my car in our garage this winter. Anyone not present to help or defend their stuff will forfeit the task to me.

Just as important are my low-carb goals. I began this lifestyle on September 1st of 2015. As my anniversary approaches, I am even more motivated to get rid of some excess.

I visited the Karcher Mall in Nampa tonight. The mall itself has seen better days. Many stores are gated up. Yet, there are some big names like Big 5 Sporting Goods, Ross Dress for Less, and Burlington Coat Factory. I never venture past those stores, but I was distracted by a clothing display. Not expecting much, I decided to get a look-see. 

Hello, Christopher & Banks! I was previously unaware of this women's line of clothing. Immediately, I was attracted to the apparel and accessories. The lovely assistant manager informed me that I could model in their fall fashion show and receive substantial discounts. My interest was sparked.

I NEED new clothes. I just want to lose additional weight before I invest. Shedding 40 pounds enabled me to arrive at 193. My next goal is to leap the hurdle of 190 and head south to 180. This will definitely place me in a smaller size of clothing.

I became excited and motivated. I signed up for Christopher & Banks' mailing list and received my reward card.

I do a lot of online shopping, but I do not want to see clothing stores disappear. Even at my thinnest, I needed to try on clothes. I have a long torso and average limbs, so I spend a lot of time in fitting rooms.

So, how did I do?

With my Caribbean cruise over, I have paused to evaluate my eating and energy expenditures. I stated in a previous post that my cruise goal was to eat low-carb and still lose weight. I know, vacations and weight-loss do not often occur together unless there is an illness. I was perfectly healthy. So, how did I do?

SUCCESSES
  • I passed on grains, alcohol, sugary beverages, and dessert.
  • Every meal consisted mostly of low-carb veggies and meat.
  • With 17 floors on the ship, I chose to use the stairways on many occasions.
  • I danced to top hits and Caribbean music.
  • I did a great deal of brisk walking.
  • My clothes fit loosely throughout the cruise.
  • I did not experience bloat until after I flew from Florida to Idaho—which was mostly due to the flight and extra water consumption.

ALLOWANCES AND CHALLENGES
  • Our evening meal in the dining room was pre-scheduled for 8:00 PM. We were eating the main course at 9:00 PM. For best weight-loss results, I need to eat earlier.
  • Small amounts of potatoes were allowed from time to time.
  • I drank occasional Starbucks breves.
  • There was so much meat to choose from! I admit to consuming a little more than usual.
  • I got less that 8 hours sleep for the duration of the cruise. We had early morning island tours and I enjoyed being in the jazz lounge until at least 12:45 AM.

END RESULT

I gained 3 pounds which are quickly disappearing as I return to a normal schedule and lifestyle. I am quite pleased with myself. I was never deprived, my energy was great, and I did not miss the things I chose not to eat.

Cruisin' and Losin'

 

I reached a 40 pound weight loss marker before leaving on my cruise to the Bahamas. "You'll want to cheat on the ship," my dad advised me. I confidently responded, "I have no desire to cheat." 

Ah, what a feeling! My goal is to eat scrumptious, satisfying low-carb food and arrive home slimmer!

I am presently sipping a St. Arbucks iced latte on the 15th level pool deck. I pushed my shaded lounge chair up against an observation window. The pool is crammed with soggy guests. I am content to bask in the balmy breeze and admire the vast Atlantic.

It has not been difficult sticking to a low-carb regime. There is no temptation or "special-treat" reasoning. The low-carb cuisine is so delicious and plentiful that any feelings of deprivation have been quelled. 

Again, my goal is to slim down while maintaining my lifestyle and using the ship's stairs. I believe!

5 Tips to Make Low-Carb Tick!


Sadly, my mom has Type 2 Diabetes and macular degeneration. This was the impetus for my switching to a low-carb lifestyle. What's written in the genes could become own my reality; and being overweight exacerbates a predisposition. In sports the offensive team is in control of the ball. I intend to stay on the offensive.

I have adapted keto, low-carb habits. This appears to be working. My goal is to keep my carbs low enough to ensure that my liver produces ketones for energy. This places me in a state of ketosis.

I have yet to invest in ketone measurement tools. This is mostly due to the expense. Fortunately, I have no major health issues that require consistent monitoring, but I recognize the value of stats.
  • Acetoacetate (Ketones in Urine): These are test strips that work until one becomes fat adapted. 
  • Beta-Hydroxybutyrate (Ketone in the Blood): Blood testing is considered the gold standard of ketone measurement.
  • Acetone (Ketones in Breath): I would rather do this than draw blood. Soon, I will be purchasing a Ketonix Ketone Breath Analyzer
For now, I pay close attention to my body. I am continuously tweaking the balance of my nutritional intake. Keep in mind that everyone is different. It was once believed that a low-carb diet is a one-size-fits-all. This is simply not true. 

HERE IS WHAT I WATCH FOR . . .

If I experience bloating . . .
. . . I review my meals to see if there were hidden ingredients—such as sugar, grains, and starches.

If I am gaining weight or weight loss is stalled . . .
. . . I evaluate my carb and protein intake. Am I including too many high carb vegetables? Is my meat consumption excessive?

I love potatoes, but they hit the bell in carb counts. Still, as a rare treat, I indulge in a small batch of French cut potatoes cooked in duck fat or I Spiralize™ root vegetables. In small doses, this is reasonable. If I lose my brakes, my body scolds me.

I was on the Dr. Atkins diet in 1973, which encouraged liberal meat consumption. The consensus now is that too much protein causes gluconeogenesis. This process turns proteins into glucose (simple sugar) and prevents ketosis. I avoid lean meats and include plenty of fatty meat, often adding butter.

When I have eaten low-carb meals and still feel hungry . . .
. . . I increase my fat intake. Fat causes satiety.

If any of the above is occurring . . .
. . . I engage in intermittent fasting. I generally eat within an 8-hour window and fast for the remaining 16-hours. This gives my body a chance to heal and recharge. Fasting for longer periods is not only beneficial, but satiation makes it a breeze.

When I can go for hours without hunger . . .
. . . this is usually a good sign that my carb, protein, and fat intake levels are working. I experienced this today. I contently fasted for hours. Usually, I will be rewarded when I weigh myself in the morning.

Bacon Onion Rings with Simple Sriracha Dip

French fries may be high in carbs, but I do not regard them as taboo. I save them for special treats — especially sweet potatoes fried in duck fat.

Onion rings require more caution. Traditional recipes contain wheat and gluten. Low-carb versions use coconut flour, almond flour, or crushed pork rinds in place of bread crumbs.

Enter Bacon Onion Rings with Simple Sriracha Sauce! Raw bacon is wrapped like a wreath around onion hoops. Thick-cut bacon yields rings that are more like a meal. Standard bacon (1/16 of an inch) creates rings that are light and crispy. Partnered with the dip, this appetizer is a novelty!

NOTE: Trader Joe's Sriracha Sauce contains 1 gram of sugar per teaspoon. The carbs will mount quickly, so I mix it with avocado oil mayonnaise for a healthy low-carb dip!

BACON ONION RINGS WITH SRIRACHA DIP


INGREDIENTS

THE RINGS
  • Several large onions. (You will only be using the outer rings, so estimate how many bacon onion rings you would like to make.) 
  • Thick or thinly sliced bacon without nitrites/nitrates—preferably sugar-free. (Thin slices will require about 1½ slices per ring; thick slices about 2½.)
THE DIP
  • Trader Joe's Sriracha Sauce
  • Avocado oil mayonnaise
  • Dried marjoram, parsley, or chives.


DIRECTIONS
  1. Preheat the oven to 275˚.
  2. Cut the ends off of the onion(s) and then slice the onion(s) in half across the equator.
  3. Slice each of those halves in half, cutting in the same direction. The rings need to be about ½ inch tall.
  4. Separate the rings by 2's. I use 4-6 outside rings, depending on the onion's size, reserving the rest of the onions for something else.
  5. Wrap each of the double rings with bacon. The bacon will cling to itself. Tuck the ends underneath the rings.
  6. Using a rimmed baking sheet lined with foil, you can place the rings directly on the foil or use a greased rack. Both ways work for me.
  7. Place rings in the oven and bake for 60-90 minutes. Thick bacon will require the full 90 minutes —  maybe less for thin bacon. 
  8. For crispier rings, place them under broiler for a few minutes at the end of cooking. Stay with them to prevent burning.
  9. The Sriracha Dip is a blend of avocado oil mayonnaise and sriracha sauce. The ration is 3 parts mayonnaise to 1 part sriracha sauce. Make as much as you need. Add a dried herb for more gusto.

My Story | Removing the Carbage


Like many of you, I have battled the bulge for most of my life. It was an obstacle course. Yet, ironically, my journey dropped me off right where I started.

I was a chubby toddler. It was considered “cute” in the 50s and 60s. I lost most of the baby fat in elementary school, although I was never slim. My personal struggle with weight arrived with puberty. 

At 5 feet, 6½ inches tall, I typically felt obese, especially when comparing myself to peers. Yet, my highest teen weight remained below 145. I laugh now that I have been 90 pounds heavier.

In the summer of 1973, I was a 15-year-old preparing for high school. My wrestling match with weight had pinned me down. When my mom purchased “Dr. Atkins' Diet Revolution” (published by Bantam in 1972), I felt like she had tossed me a life preserver.

Carbohydrates had been my friend longer than I knew what a carbohydrate was. Carbs were my go-to food, but my indulgence was not without guilt. I reasoned that binge-and-purge was my own invention. I developed an unhealthy relationship with food and I rarely ate 1 serving of anything.

I favored the “P” words: pastry, pasta, and potatoes. I loved buttered white bread and plates piled with pasta. I sought out bakeries featuring scones, croissants, and anything chocolate. I had a little tea with my sugar; kept a perpetual stash of watermelon hard candies in my school locker; and I knew where Mom hid the good stuff.

The Dr. Atkins’ program worked amazingly well! (I majored more on the protein aspect and not the fat.) I trimmed down in time to turn heads at the high school, although I soon surrendered to social eating. I had become bored with ground beef patties, hot dog wieners, tuna, egg salad, cheddar cheese, and iceberg lettuce. In a family of 5, steaks were not often on the grocery list.

My biggest weight gain occurred with my first pregnancy in 1987. Fish made me ill, yet I had no issues with carbs. I often craved a capacious bowl of mashed potatoes pooled with butter. My weight soared to 180, dropped while nursing my daughter, and then climbed back to my top pregnancy weight. 

I will not burden you with the names of diets, but I have spent the last 4 decades experimenting with most trending weight loss systems. Despite practicing food-combining, cutting the fat, and emulating the French and Greeks, I just kept adding pounds. I actually woke up to the exact same weight for 1 year, no matter how carefully I had eaten!

My husband frequently observed me preparing organic and natural meals that Whole Foods would have applauded. The nagging question was, “How could we go wrong with brown rice, whole grain breads, and pasta?”

In 2015, a friend told me she had gone gluten free. I knew I was not celiac, but I was experiencing considerable bloating when I ate grain products. I eliminated gluten and felt better. I lost only 10 pounds. Then, in August of that year, I discovered Jimmy Moore’s “The Livin’ La Vida Low-Carb Show” via podcast. I had an AHA moment!

Eliminating gluten had begun to clear out the usual suspects, but I needed to acknowledge that low-carbing was the only thing that had ever worked for me! So, I returned to my point of departure, only the landscape had changed dramatically. 

My first foray into low-carbing was in a world without internet. Now the resources are almost overwhelming! There is no shortage of support! I have adapted to a LCHF (Low-Carb-High-Fat) plan which includes moderate meat, healthy high fats, and low carb vegetables. I am keeping my carbs closer to a Keto diet, although I have not invested in the equipment to monitor ketone readings. And, as of this posting, I have lost 37 pounds!

I enjoy creative cooking and that includes my passion for ethnic cuisine. I have made some sacrifices—but not with flavor. Fat is now my friend! And butter is back, baby!

Butter and I go way back! I enjoyed it long before I was a low-carber. (I detested its plastic imposter.) I never want to how many slices of white bread I lavished with this fatty goodness! 

Well, as a young teen, I was babysitting. The kids were taking a nap, so I memorized this tongue twister. The ingredients of my batter have changed, but the butter is better than ever!


Betty Botter bought some butter;

“But,” said she, “this butter’s bitter!

If I put it in my batter,

It will make my batter bitter;

But a bit of better butter

Will but make my batter better.”

So she bought a bit of butter,

Better than her bitter butter,

Put it in the bitter batter,

Made her bitter batter better.

So ’twas better Betty Botter

Bought a bit of better butter.

Why do it if I don't have to?

I am fortunate to not be celiac or gluten intolerant. Some friends—suffering from celiac disease—have legitimately questioned why I would eat gluten free when I don't have to. Well, having lost weight by cutting out gluten, I reintroduced small amounts of wheat products during Christmas of 2014. I gained weight faster than a chicken lays eggs! I immediately experienced major bloating, discomfort, and sluggishness. My body put me on alert. 

I am definitely gluten sensitive. As long as I don't replace gluten with unnecessary carbs, I enjoy greater health, energy, and sharpness. Plus, eating whole, organic, and locally sourced food is quite satisfying.

I have ridden the diet roller coaster. It had its ups and downs and when I got off, my weight mostly went up! I want to eat real food. I just need to listen to what my body is telling me.
