Thankful Musings



Since this was my first Thanksgiving without my husband, I accepted an invitation to feast and fellowship with another family. Brock and I got to have deep fried turkey for the first time! It was fun meeting their family and friends—an amiable bunch! It made the day more comfortable, and I appreciated that!

As I suspected, my 4-day holiday took on V-formation, winging its way to what my co-workers, in Orthopedic Scheduling, describe as a Monday on steroids. At least I have a chiropractic appointment after work.

It rained all day Friday. I mostly relaxed, although I launched some overdue projects. Yesterday, I attended the Small Business Saturday in Downtown Boise. Guests were given a passport that could be stamped by participating businesses. Amazingly, the outdoor market is still open until December 15th, which is impressive since the temps are descending fast! I warmed up with an aromatic espresso when my extremities grew numb.

I veered from my low-carbing (which I seldom do) to treat myself to Sambusas—traditional African meat pastries. They remind me of empanadas but with a fluffier crust. Africa was a theme because I also bought handcrafted items from refugee ladies who came from the Congo and Somali.

Today was comprised of an inspiring church service, grilled salmon and winter squash, French press coffee, and Christmas movies.

I have been a widow for over eight months now. I rejoice that I have made it this far! Grief, the stress of starting a new vocation, and the resulting sedentariness of life in a cubicle have undoubtedly caused havoc with my equilibrium. After losing 41 pounds, I am still creatively low-carbing, although I have mysteriously gained weight. It is incredible how a crisis can disrupt success.

I recently began seeing a holistic chiropractor, Dr. Rosie of Main Health Solutions. Dr. Rosie is a proponent of the ketogenic diet and natural healing. She agrees that the sudden changes in my life have created a disturbance. Much like a hard drive malfunctioning when its directory branches are broken, the body loses its balance when the nervous system misfires or fails to communicate properly. 

Truthfully, my back has been out of whack since the delivery of my youngest son—18 years ago. At 60, I have noticed that my posture is not where it should be. Xrays show that I have a bit of degeneration where I had my last epidural. 

I am looking for a life alignment, not just a repositioning of my physicality. 

This said I am continuing to do what I know to do. I believe that I will find my sure footing again. Cheryl A. Barrett wrote, “Time has no boundaries in matters of the heart.” Perhaps another revelation resonates with Shauna L Hoey's thoughts, “Heartache purged layers of baggage I didn’t know I carried. Gifts hide under the layers of grief.”

Hodgepodge


Trees are beginning to disrobe here in Idaho. Since winter creeps in reasonably fast, I celebrate with the first signs.

It's not National Sneak Some Zucchini Into Your Neighbor’s Porch Day (celebrated on August 8th), but I am enjoying the efforts of generous gardeners. I baked chicken thighs and roasted zucchini halves covered with Pork Panko Breadcrumbs (crushed pork rinds). I season them first with whatever catches my fancy and then add some melted butter to achieve the texture and color I prefer. This is also a tasty addition to fish! Of course, we can crush our own; however, I love the convenience.


Although I am still embattled by a sedentary lifestyle due to my new job in a cubicle, I continue to persevere with low carb choices. To counter, I joined a gym! I have 2 visits under my spandex waistband. To celebrate, I gave myself a bit of TLC last Saturday: French Press Coffee with heavy whipping cream.

DINING OUT

After 33 years of marriage and raising three children, I am not used to shopping and cooking for just one person. I also arrive home later. As I am rethinking these challenges, I am inclined to finding affordable ways to eat out. 

For instance, I have the Smashburger app on my phone. I am fond of their bunless burgers and fried (unbreaded) Brussels sprouts. I received this particular meal for free yesterday, and I recently paid $3.00 for a signature Cobb Salad—which features a fried egg. To accomplish this, I consistently participate in their online surveys, and I scan my receipts for reward points. Taking surveys have garnered favor with the staff, primarily because I continually praise their service to Smashburger corporate. The more diligent I am, the more the rewards seem to pile up. 

AT HOME

As I begin to cultivate scaled-down meals at home, I am averaging one meal per day. I seriously am not that hungry. If I do snack, it is with something fatty.

A dear lady at church has been gifting me with homegrown zucchinis. They are delicious breaded with crushed pork skins and then roasted. I am using crushed Chicharonnes to bread many items, including fish and onion rings. I call this my new summer thrill.

I am gradually creating new adventures by inserting familiar faces into settings that were once shared with my husband. It is a process, but I am finding satisfaction and pleasure in simple things. I continue to search for local events that will keep me happily distracted.

I kept the above meals low-carb by removing the noodles. I see my weight dropping again as stress and grief levels acclimate to this new life of mine. I feel relief!

It occurred to me yesterday evening why doing things alone bothers me in ways that it never did before. I am usually independent and unafraid of launching out on my own. When Barry used to work out of town, I often flew solo, but I felt secure in knowing that he would be returning. Now, with him gone, I have no choice. Strangely, that makes a difference. Thankfully, friends have been showing interest in joining me. I find this soothing.

Understandably, these last four months have introduced me to emotions and challenges I have never faced. On June 8th, it will have been four months since Barry died! I have undoubtedly scaled some new terrain. While time seems to have evaporated, I have made some incredible progress.

Still, there has been discouragement. Since the day after Barry's passing, I vowed to stick to my low-carb/ketogenic lifestyle. I knew it was essential to stay the course and take care of me. I had lost 41 pounds! I was not willing to trash that success. Food could quickly become a pacifier, and I refused to let it.

Despite staying the course though, I began to gain weight. 

Out of necessity, I had abruptly begun a new vocation about five weeks after Barry died. I became a Patient Specialist with a major hospital. I had previous customer service experience but had never worked in the medical field. I had jumped directly into the fire and was enduring a longer commute to boot!

One day, after battling traffic, I pulled into a strip mall, horribly depressed. I felt like a spent, frumpy old woman whose waistband was beginning to choke my spirit. Seeing my reflection in my car's window offered no comfort.

Now, I believe that God is more willing to speak to us than we are eager to listen. (And no, Joyce Behar, I am not mentally ill.) In a still, quieting voice, He nudged me. He reminded me that five things factored into this weight gain.
  1. The stress of Barry dying suddenly and leaving me on my own
  2. Grieving his loss
  3. Being thrust into a sedentary job—in a cubicle—for 8 hours a day
  4. More driving time in rush hour traffic
  5. Not getting enough sleep
I had left a more active position and a commute that was only 10-15 minutes each way. My life had undergone a major rehaul. My operating system was affected. 

So, I countered with positive steps...
  1. Reading the Bible and plugging into peaceful, soothing outlets of strength and hope
  2. Allowing myself to grieve and heal
  3. Utilizing the four flights of stairs to my office, parking my car further away, and doing planks to strengthen my core
  4. Leaving earlier for work to beat the traffic and listening to life-building audiobooks
  5. Prioritizing my time so that I can get more sleep
I AM NOT GIVING UP!

Hygge


~Alex Beauchamp, of Hygge House, describes "hygge" beautifully... 
Hygge (pronounced hue-guh not hoo-gah) is a Danish word used when acknowledging a feeling or moment, whether alone or with friends, at home or out, ordinary or extraordinary as cozy, charming or special. 
Hygge (or to be “hyggeligt”) doesn’t require learning “how to”, adopting it as a lifestyle or buying anything. It’s not a thing and anyone telling you different either doesn’t understand it or is literally trying to sell you something that has nothing to do with the concept. You can’t buy a ‘hygge living room’ and there’s no ‘hygge foods’ to eat. 
Hygge literally only requires a conscious appreciation, a certain slowness, and the ability to not just be present – but recognize and enjoy the present. That’s why so many people distill ‘hygge’ down to being a ‘feeling’ – because if you don’t feel hygge, you probably aren’t using the word right.
My ancestral lineage—on my dad's side—includes Danes, so I find this concept to be connective. I had "hygge" in mind when I transformed my bedroom into a Kare-Lair (as in Karen), even replacing an expired 32-year-old mattress. Indeed, I have created a place to retreat, to be.

It's amazing how a major life event can knock routine out of its orbit. Since Barry's sudden passing on February 8, 2018, I have used projects as a tool of distraction. Projects have included major financial decisions, record changes, thank-you notes, paying off debt, cleaning, purging, reorganizing, and redecorating. I even had my gardener plant Day Lilies and a Malus Loyalty Crab Tree in my front yard.

In many respects, these activities have displaced ordinary pursuits such as Everlovin' Low-Carb, my Facebook Pages, and Instagram. Yet, it has been therapeutic. Navigating grief is an ongoing factor, but my life-flow is beginning to make a comeback. I am thankful for that.

Instant Pot: White Wine Pork Belly


Get ready for a mouthful... I just started using my Instant Pot DUO80 8 Quart, 7-in-1 Multi-Use Programmable Pressure Cooker, Slow Cooker, Rice Cooker, Steamer, Saute, Yogurt Maker, and Warmer. I find it easier to say Insta-Pot. However, there are a few different models, so I am clarifying the exact product that I am using.

My pantry space was being swallowed up by appliances, so I was eager to consolidate. Yet, when I first unboxed my new Insta-Pot, I was naturally intimidated. The remedy? Watch YouTube videos. I am a visual learner so, with a few videos in my arsenal, I was ready to fly.

I had not felt much like cooking since Barry passed away on February 8th, 2018. My 18-year-old son, Brock, is not always here, so I am usually cooking for just me. Still, after starting a new job and increasing my commute time, I require meals that are low-carb and quick. 

One of my main adjustments right now is buying and making the right amount of food. With Barry gone, I do not need a fridge filled with leftovers. Nor do I want any waste.

My very first endeavor involved a pork belly recipe from Abel Jones's Ketogenic Instant Pot Cookbook: 600 Low Carb High-Fat Keto Recipes that Cook ThemselvesI purchased the Kindle version for my iPhone. Needless to say, I will not be running short of inspiration anytime soon. 

There were no curve balls. Both Brock and I were pleased with the meal. Cleanup was a delight. 

NOTE: Many Instant Pot recipes instruct the cook to use the MANUAL button. There is no such button on my appliance. Instead, they have replaced it with the PRESSURE COOKER button.
INSTANT POT WHITE WINE PORK BELLY
Abel Jones

Ingredients:
  • 1 pound Pork Belly 
  • 3 tbsp. Olive Oil 
  • ½ cup White Wine 
  • 1 Rosemary Sprig 
  • 1 Garlic Clove 
  • Salt and Pepper, to taste 
Directions:
  1. Heat the olive oil in your Instant Pot on SAUTE. 
  2. Add the pork belly and cook for about 3 minutes on each side. 
  3. Pour the wine over. 
  4. Place the rosemary sprig and garlic inside. 
  5. Sprinkle with salt and pepper. Close the lid and cook on MANUAL for 40 minutes. 
  6. Do a quick pressure release. 
  7. Serve and enjoy!

Lakanto Monkfruit Sweetener


This would have been Bear and my 35th Valentine's Day—if you count our courtship. His passing on February 8, 2018 understandably made this year's celebration an obstacle course of melancholy emotions.

In anticipation of Valentine's Day, I had pre-ordered a fresh installment of Harney & Sons "Valentine's Blend" sachets. With chocolate and rosebuds, it is the perfect beverage for romance and tea lovers. Although I never got to share it with Bear, I did brew some up for myself, adding heavy cream and a teaspoon of Lakanto Monkfruit (lo han guo) Sweetener. It was amazing!

As someone who no longer craves white sugar but is not particularly fond of the stevia aftertaste, I found monk fruit sweetener to be a delightful substitute. There was nothing unpleasant about monk fruit. In this combination, it tasted like the real thing! 

Monk fruit is 100-250 times sweeter than sugar, so not much is needed. It is ZERO GLYCEMIC, NON GMO, VEGAN, GLUTEN FREE and it has ZERO CALORIES and ZERO AFTERTASTE. It also has a 1:1 replacement ratio. Still, the product has 4g of carbohydrates per teaspoon, so I am cautious about how much I ingest.

Saying Good-bye


I have been scarce lately. In fact, my last post was February 7, 2018, the day before my life—as I had known it for 33 years—was altered forever.

On February 8, 2018, my husband Barry Lee Miller attended VSSM with me. VSSM is a ministry school hosted by Caldwell, Idaho's Valley Church. Once class was over, students came forward to voice their prayer requests. Barry, who had been praying next to me, jumped from his seat and ran toward the front. Those who saw him coming reported a joyous expression on his face. (I only saw his backside.) His gaze was set on something unseen between him and the row of people. Suddenly, he fell forward on his face. He made no effort to catch his fall.

Despite every effort to resuscitate him, Barry passed away. The coroner determined that he suffered a heart attack—but not the kind that occurs with the familiar warning signs. She explained that a piece of plaque may have broken loose and clogged an artery, in which case death can be instantaneous. He suffered no pain.

We were all stunned. Barry had simply stumbled into GLORY!

Since losing his job, Barry had been in a positive and peaceful place. He was praying and devouring God’s Word, reaching out to others, and he was the happiest he had been in years. Brock, our 18-year-old son even commented, “Dad is so happy!”

Barry kept assuring me, "God is going to pour out His blessing and provision upon our family. We are under an open Heaven." I believed it. I just thought it included him. As I rehearse the 4 weeks before his passing, Barry seemed to be preparing me to forge ahead.

I had 33 years with this remarkable man of God. He was loving, funny, caring, sacrificial, dedicated, faithful, and his family was his greatest treasure on this earth.

There is no mistake that God orchestrated this homecoming in front of our watchful eyes. I do not pretend to understand the timing, especially since we were enjoying a new season of marriage and ministry. 

Home is the hardest place to be. Barry's spirit, resonating voice, and laughter added so much to our abode. I am still coming to grips with the reality that I am moving forward without him. Grief seems unbearable at times. I did not want to do this alone. Yet, I have this sense that God is guiding me to something extraordinary—a place that will begin to make sense of this arduous and complicated journey. 

I love you, Bear! You were my best friend and my biggest supporter. Until we reunite, keep cheering me on.

Barry Lee Miller, age 65, died suddenly on Thursday, February 8, 2018, in Caldwell, Idaho. He was born on January 28, 1953, in Reading, Pennsylvania, to Irwin “Buzzie” and Anita (Border) Miller. He will be greatly missed by his best friend and wife of 33 years, Karen; his 3 children, Briana, Bryce, and Brock, as well as his older brother Kenneth Miller, who still resides in Reading.

Barry served 8 total years in the US Marine Corps, ending his service in Southern California. There, he became a Christian, met and married Karen, and raised their 3 children. He moved his family to Idaho in 2011.

He worked most of his life in home delivery jobs: Alta Dena Dairy, Home Grocer, and Schwan’s. He loved reading the Bible, praying, and ministering to others. His pastimes included Penn State Football, military and sports movies with overcoming themes, and spending time with his 4 grandchildren.

Barry’s Life Celebration will be held on Saturday, February 17, 2018, at Valley Church, 2900 Life Way, Caldwell, ID, 83605, at 11:00 AM. There will be a Marine Corps Tribute, photos and video, spoken remembrances, and a luncheon following.

Memorial donations in memory of Barry Miller can be made to Valley Church, 2900 Life Way, Caldwell, ID, 83605.

BREAKFAST FAT BOMBS
Maria Emmerich

Prep Time: 7 minutes (not including time to cook eggs or bacon)

INGREDIENTS:
  • 6 hard-boiled eggs, peeled and halved
  • 3 tablespoons store-bought or homemade mayonnaise (recipe in book)
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon dried chives
  • 1 cup diced bacon, cooked until crispy
INSTRUCTIONS:
  1. Remove the egg yolks from the whites and place the yolks in a bowl. Dice the whites and set aside.
  2. To the bowl with the egg yolks, add the mayo, salt, and chives. Combine until smooth. Add the diced egg whites and gently stir to combine.
  3. Take 2 tablespoons of the egg mixture and roll it into a golfball-sized ball. Roll the ball in the cooked bacon. Repeat with the remaining egg mixture and bacon and serve.
  4. Store in an airtight container in the refrigerator for up to 4 days.

90-Second Microwave Cheese Bread Wedges

Here in the Treasure Valley of Idaho, we are experiencing a mild winter. There is plenty of precipitation. The temperatures are just too high to support snow. It is almost sad to see courageous little flakes attempt a landing, only to melt immediately. We were buried in snow last year, so this is quite a change.

It is still cold though, so I am craving comfort food. These cheese wedges are fatty and filling. Often, I do not need anything else.

4th & Heart White Truffle Salt Ghee Butter

90-SECOND MICROWAVE
CHEESE BREAD WEDGES

Prep Time: 3 min
Cook Time: 2 min

INGREDIENTS
  • 1 egg, whisked
  • 1/3 cup almond flour 
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon Pink Himalayan salt
  • 2 and 1/2 tablespoons ghee or coconut oil, melted (I used 4th & Heart White Truffle Salt Ghee)
  • 1/4 cup grated cheddar

NOTE: There’s no need to grease the mug since there is plenty of fat in the bread.

INSTRUCTIONS
  1. Use a microwaveable mug.
  2. Crack the egg inside the mug and beat it.
  3. Add the remaining ingredients and stir with a fork.
  4. Microwave for 90 seconds on high.
  5. Turn the mug upside down to pop it out.
  6. Gently cut into wedges.
I don’t butter the bread because of the Ghee.

"Keto." by Maria Emmerich


I consider adhering to a ketogenic diet an easy task. Even so, my history with food has developed certain challenges. Occasionally, I hit a plateau or experience intestinal turbulence. When I do, International Bestselling Author, Maria Emmerich, has savvy and practical solutions to any stall in my progress.

Happily, after meeting Maria in person, I was afforded the honor of spotlighting her books here at Everlovin' Low-Carb. I was expectant and excited when I received my first delivery from Victory Belt Publishing. Inside were 2 hot-off-the-press recipe books! I marvel that Maria never seems to run out of inspiration.

Today, I will be featuring Keto. (The Complete Guide to Success on the Keto Diet, Including Simplified Science and No-Cook Meals).  I like to refer to it as "Keto ... Period".

This installment is even more special because Craig Emmerich, Maria's husband, co-authored the book with her. When Maria began her ketogenic journey, Craig was supportive but not on board. Eventually, he surrendered to the keto lifestyle and shed his beer belly in the process. It is wonderful to have his point-of-view intertwined.

My heart is a flutter! My friend, Mary Ann, and I stopped for Poké Bowls in Downtown Boise today! The menu is Asian and eclectic, brimming with low-carb possibilities!

You can select signature bowls such as: “The Bogus Basin” or “The Lucky Peak Shellfish”. “The Greenbelt” and “9th Street Salmon” are both Poké Burritos wrapped in seaweed. All of these are named after Idaho hotspots.

You also have the option to design your own bowl... First, you “Make your bed”: White or Brown Rice, Spring Mix, Zucchini Zoodles, or Chips. Second, you “Pick your catch”: Salmon, Tuna, Traditional Poké, Spicy Tuna, Hamachi, Shrimp, Scallops, and Tofu. Third, you “Select your goods”: Avocado, Crab, Seaweed Salad, Ginger, Onions, and Cucumber. Fourth, you “Sauce it up”: Piranha Sauce, Spicy Piranha, Hawaiian Shoyu, Paleo Pineapple, Citrus Ponzu, Korean Bae, and Outrigger Teriyaki. Fifth, you “Top it off”: these items range from Carrots to Wanton Crisps to Wasabi to Spicy Aioli.

The staff is remarkable; the food is fresh; the place is clean and spacious. Best of all, our meals were tastebud-tingling and delicious!
