Macaroons

Ketonia Keto Coconut Macaroons
Like you, I have tried many of the keto products out there that are advertised as a viable substitution for the "carby" comfort foods that I have given up. I wish my face could be filmed each time I take that long-awaited bite of something new. Most of the time, I display disappointment or disapproval.

I am realistic that the foods that took a lifetime to become attracted to don't always have an equal replacement. Mostly, the sweetness doesn't taste exactly like sugar, or the texture is off. (I have yet to discover a keto biscuit that mimics the flakey, butter-collecting crevices of the real thing.) Happily, the longer I have pursued a ketogenic lifestyle, I have acclimated to a new set of ingredients.

I just ordered these Ketonia Keto Coconut Macaroons with high hopes. One of my all-time favorite desserts is coconut macaroons. These Ketonia macaroons are made with healthy fats, no sugar or fillers, and they are gluten-free. Founded by a French pastry chef and her son, I have a good feeling about this product. I will keep you posted.

And the winner is...

THANK-YOU to everyone who participated in my Cookie Giveaway! The winner was drawn the old fashion way. I took all entries from Instagram's @kajumi and @everlovinlowcarb, as well as here on this blog. I was diligent in giving credit for double entries.

My husband had the honor of drawing from the folded slips of paper. Lynne Behrns, from Southern California, was selected! Congrats to the soon-to-be cookie-munching Lynne!

Low-Carb Peanut Butter Cookies

In my pre-low-carb days, I could easily eat an entire bowl of peanut butter cookie dough. It usually happened over the course of a day. (I know I am not alone.) I loved dough and sometimes baking just seemed unnecessary

With sugar behind me, finding low-carb cookie recipes has been a challenge. For one, I do not crave sweets like I used to. Further, substitute-sugars will never taste like white table sugar. This is why this recipe surprised me. The cookies look and taste delicious; and it only takes a couple to curb an urge.

NOTE: I prefer them warm, so I heat up cool cookies for 15 seconds in the microwave.

LOW-CARB PEANUT BUTTER COOKIES
Adapted from a recipe by Laura Hickman

24 cookies
Total time: 25 minutes

Ingredients
  • ½ cup coconut flour
  • 1 cup powdered Swerve
  • 1 cup Smucker's Natural Creamy or Crunchy Peanut Butter (just peanuts, minimal salt, and no sugar)
  • 3 eggs
  • 1 tsp salt
  • 1 tsp pure bourbon vanilla extract (I use Trader Joe's brand)
  • Chocolate chips sweetened with stevia
Instructions
  1. Heat oven to 350 degrees.
  2. Prepare baking sheet with parchment or cooking spray. (I use Pampered Chef Stoneware.)
  3. Mix all ingredients in mixer (or with a hand mixer) until well combined and dough has formed.
  4. Measure the dough with a tablespoon measure. (I use the Pampered Chef Small Scoop.)
  5. Form balls of dough and place them on on your baking sheet or stoneware.
  6. Flatten cookies by making a crisscross mark with a fork. (I use a small bamboo fork.)
  7. Optional: Add a chocolate chip.
  8. Bake for 14-17 minutes till edges are golden brown.

"Low-Carb Holiday Cookies and Bars"

With low-carb-keto bloggers like Carolyn Ketchum, there is no room for boredom. She is the writer and recipe developer behind the success of All Day I Dream About Food. Gestational diabetes became a lifelong challenge, so she created a blog to playfully share her recipes. As her popularity and readership grew, her blogging became a full-time venture. In her own words she is "...a major carnivore and an unrepentant sweet tooth." Unwilling to forfeit her love for cooking and baking, she began to convert her favorite recipes to uncompromisingly flavorful low-carb versions.

Featured here is Carolyn's Low-Carb Holiday Cookies eBook. I have already purchased and downloaded my own copy. One look at her German Chocolate Truffles and I was smitten! Her eBook can be purchased and downloaded online. It is only $4.99 through Paypal.
