90-Second Microwave Cheese Bread Wedges

Here in the Treasure Valley of Idaho, we are experiencing a mild winter. There is plenty of precipitation. The temperatures are just too high to support snow. It is almost sad to see courageous little flakes attempt a landing, only to melt immediately. We were buried in snow last year, so this is quite a change.

It is still cold though, so I am craving comfort food. These cheese wedges are fatty and filling. Often, I do not need anything else.

4th & Heart White Truffle Salt Ghee Butter

90-SECOND MICROWAVE
CHEESE BREAD WEDGES

Prep Time: 3 min
Cook Time: 2 min

INGREDIENTS
  • 1 egg, whisked
  • 1/3 cup almond flour 
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon Pink Himalayan salt
  • 2 and 1/2 tablespoons ghee or coconut oil, melted (I used 4th & Heart White Truffle Salt Ghee)
  • 1/4 cup grated cheddar

NOTE: There’s no need to grease the mug since there is plenty of fat in the bread.

INSTRUCTIONS
  1. Use a microwaveable mug.
  2. Crack the egg inside the mug and beat it.
  3. Add the remaining ingredients and stir with a fork.
  4. Microwave for 90 seconds on high.
  5. Turn the mug upside down to pop it out.
  6. Gently cut into wedges.
I don’t butter the bread because of the Ghee.

Pumpkin!


With fall festooned around me, I have pumpkin on the brain! I whipped up my first Low-Carb Pumpkin Bread by Melissa Sevigny at I Breathe, I'm Hungry. Barry and I adore pumpkin and this loaf did not disappoint. It has a wonderfully soft texture, almost on the verge of being pumpkin pie. I might add a bit more stevia next time; nevertheless, whipped cream was quite complimentary.

Low-Carb Biscuit Bites and Franks

Bread was once a major weakness for me. Although I have since tried some pleasing low-carb bread, ordered online, my greatest satisfaction comes from recipes that I bake myself.

I recently featured "90-Second Microwave Paleo Bread" in my April 19, 2017, post. I have baked it with both almond flour and almond meal, each yielding tasty results! Swapping out the butter for duck fat also made a delicious difference. The fiber and fat kept me content for hours.

I baked Paleo "Almond Flour Biscuits" on Tuesday. These met any criteria I have for a biscuit. It was wonderful comfort food without the guilt. 

This recipe comes from Wholesome Yum, a wildly popular site that focuses on gluten-free and low-carb foods. My only variation was that I added Bragg Organic Sprinkle. I refer to these little yummies as "biscuit bites" because I did not flatten them. They were perfect for popping into one's mouth. Just ask my husband.

I allowed more space than I needed to at first. These biscuits retain their pre-baking size and shape. I found that I was able to bake in bigger batches.

An Instagram friend mentioned that these biscuit bites look like little scoops of ice cream. This just makes them more attractive to me.

I tried these with and without butter. Either way, I loved them. My husband said they were buttery enough for his taste. Get the recipe HERE.

Most low-carbers lament the absence of bread. I understand. Prior to LCHF, I became weak-kneed for buttered sourdough and biscuits. In a moment of clarity, I recognized that I loved the butter more. There is no butter deprivation in this lifestyle. Still, I want that occasional slice of buttered bliss.

After dabbling with gluten-free bread, made primarily of rice flour, I was not impressed. Once I committed to low-carbing, I began to explore grain-free recipes. Keto Bread Loaves (by Rule.me) was the first baked bread that met with my approval.

I then tried 90-Second Microwave Paleo Bread (by Louise Hendon).  I was skeptical because it seemed improbable that any bread could taste good with only 90 seconds of baking, especially in a microwave oven. Well, I was delighted! Not only is the recipe easy to create and quick to cook, it gives me the bread fix I crave!

I cook each 90-Second Microwave Paleo Bread loaf in a large mug (without beveled sides) and allow it to cool slightly. I prefer an English muffin style thickness, so I cut each loaf into 3 slices. I prepare the slices 2 ways: pan toasted in butter or broiled. 

The pictured slices were slathered in garlic butter and topped with Bragg Organic Sprinkle. Today, I placed the bread under the broiler.

There is no limit to what can be done with these. Just think outside the breadbox. Whatever you can do with grain bread, you can do with these gratifying slices!
