Fat Head Pizza


After 2 years of LCHF, I finally tried one of the most popular fast-food hacks in the low-carb sphere: Fat Head Pizza! This grainless crust is made with mozzarella cheese, cream cheese, egg, and almond flour. The toppings can be anything traditional or imaginative. I opted for mozzarella cheese, pepperoni, sliced onions, and sugar-free pizza sauce. 

The cheesy crust is obviously different than what I am used to, but I enjoyed it! After 3 small slices, I was full. Considering that I had not consumed pizza in over 2 years, this recipe earns big points for flavor and satiation.


As usual, I consulted the Brock-ometer (my 17-year-old, non-low-carb son). He raved about it and had to be stopped from devouring the entire pizza! My husband, Barry, who is dabbling with low-carb, called it a home run! I agree.

From Modeling to Dawdling

My modeling debut was a blast yesterday! Those who know me will not be surprised that my inner ham emerged, especially as I mimicked a supermodel runway strut. I can never pass up laughter. I left the store with 2 more pieces—at 40% off—to add to my transitional wardrobe.

My sweet friend, Kathy, showed up to support my modeling effort. Afterward, we lunched at Café Zupa where I ordered soup and salad with dollops of guacamole adorning each bowl. Kathy and I had a wonderful time of fellowship!

Autumnal Toes

It was then time for a pedicure! One of the first blessings of going low-carb was being able to see my feet without bending over. My toes have been partying ever since! For the first time in decades, I had them painted. I chose aquamarine just before my cruise to the Bahamas in June. With fall knocking on the door, it was now time for autumnal hues. This shade is nocturnal as it becomes russet at night.

If the pants fit...

This Saturday will mark another first for me. I will be modeling two seasonal outfits at the Nampa, Idaho, Christopher & Banks locationI would have been a reluctant model forty-one-pounds ago. Now, as a 59-year-old realizing the gradual reemergence of a figure, I am jazzed!

Even my mother has lamented the challenge of buying clothes for me. My torso is long and I have an ample rear end. My shoulders and thighs are fuller, while my limbs are an average length. I do not look disproportional, but finding styles that fit and flatter is an undertaking. 

You know the deal. Pants will fit in the hips and derrière, but the legs are too long or wide, or the pants are the perfect length, but the waistline requires a vacuum seal to suck it in. I try on so many styles and sizes that my fitting room resembles a wear-house. Thankfully, Christopher & Banks understands the rest of us.

I learned my fashion sense from my mother's classy style. She has never dressed old. She adores color, design, and accessories. She orchestrates harmony! Regardless of our dissimilar body types, I admire her finesse. There is no shame in dressing like Mom! 

I was eager to attend my fashion show fitting! The mirror revealed ensembles that accentuated the positive and made me look good. I wanted to move—soak up some life!

Weight loss is not the magic wand that turns us into something or someone special. I believe we are already those things and that we need to recognize and love what's inside the package first. I dream thin, so the mirror is beginning to align with how I already see myself.
