Low-Carb Biscuit Bites and Franks

Bread was once a major weakness for me. Although I have since tried some pleasing low-carb bread, ordered online, my greatest satisfaction comes from recipes that I bake myself.

I recently featured "90-Second Microwave Paleo Bread" in my April 19, 2017, post. I have baked it with both almond flour and almond meal, each yielding tasty results! Swapping out the butter for duck fat also made a delicious difference. The fiber and fat kept me content for hours.

I baked Paleo "Almond Flour Biscuits" on Tuesday. These met any criteria I have for a biscuit. It was wonderful comfort food without the guilt. 

This recipe comes from Wholesome Yum, a wildly popular site that focuses on gluten-free and low-carb foods. My only variation was that I added Bragg Organic Sprinkle. I refer to these little yummies as "biscuit bites" because I did not flatten them. They were perfect for popping into one's mouth. Just ask my husband.

I allowed more space than I needed to at first. These biscuits retain their pre-baking size and shape. I found that I was able to bake in bigger batches.

An Instagram friend mentioned that these biscuit bites look like little scoops of ice cream. This just makes them more attractive to me.

I tried these with and without butter. Either way, I loved them. My husband said they were buttery enough for his taste. Get the recipe HERE.

Most low-carbers lament the absence of bread. I understand. Prior to LCHF, I became weak-kneed for buttered sourdough and biscuits. In a moment of clarity, I recognized that I loved the butter more. There is no butter deprivation in this lifestyle. Still, I want that occasional slice of buttered bliss.

After dabbling with gluten-free bread, made primarily of rice flour, I was not impressed. Once I committed to low-carbing, I began to explore grain-free recipes. Keto Bread Loaves (by Rule.me) was the first baked bread that met with my approval.

I then tried 90-Second Microwave Paleo Bread (by Louise Hendon).  I was skeptical because it seemed improbable that any bread could taste good with only 90 seconds of baking, especially in a microwave oven. Well, I was delighted! Not only is the recipe easy to create and quick to cook, it gives me the bread fix I crave!

I cook each 90-Second Microwave Paleo Bread loaf in a large mug (without beveled sides) and allow it to cool slightly. I prefer an English muffin style thickness, so I cut each loaf into 3 slices. I prepare the slices 2 ways: pan toasted in butter or broiled. 

The pictured slices were slathered in garlic butter and topped with Bragg Organic Sprinkle. Today, I placed the bread under the broiler.

There is no limit to what can be done with these. Just think outside the breadbox. Whatever you can do with grain bread, you can do with these gratifying slices!

Fat Sat | Grocery Outlet

Fat Sat will be a weekly Everlovin' Low-Carb feature. The post title is short for Fat Saturday and will feature LCHF (low-carb-high-fat) news, tips, and inspiration.

I now have a Grocery Outlet in my neighborhood. Being unfamiliar with the store, I immediately pictured heavily processed food. I was curious though, so I attended the Grocery Outlet Grand Opening. I was delighted to discover their NOSH merchandise (natural-organic-specialty-healthy), which includes many low-carb essentials.

I found plenty of products labeled gluten free, but nothing specifically identified as low-carb. Gluten free products usually replace the culprits with other carbs, so I read a lot of Nutrition Facts. I ended up scoring some quality goods at serious savings!

The only drawback of any outlet is the limited availability of products. Yet, I have seen many favorites reappear.

Asian Goulash


My dad had a tradition of making Matheny Goulash—named for our family. I clearly recall the aroma and anticipation. He used whatever he found in the pantry and fridge, and created a simmering pot of goodness! Rice, beef, and tomatoes were staples in the meal, but no 2 goulashes were the same.

I am not eating rice these days, but riced cauliflower provides a perfect base for anything! This dish has a decidedly Asian flavor! I used only what I had on hand. All measurements are approximate because I cooked instinctively. I also used my Pampered Chef Food Chopper to achieve texture.

ASIAN GOULASH


INGREDIENTS
  • 1 tablespoon of butter
  • 1 pound of ground beef—not lean
  • ½ cup chopped onion
  • ½ cup chopped raw zucchini
  • ½ cup chopped red bell pepper
  • 1 clove of garlic, finely chopped
  • 1-2 tablespoons of grated fresh ginger
  • 1 teaspoon toasted sesame oil
  • 1 package (about 3 cups) of Trader Joe's Organic Riced Cauliflower—thawed
  • Coconut aminos
  • Salt and pepper to taste
INSTRUCTIONS
  1. Heat the butter up in a wok and add the ground beef. Add salt and pepper. Cook just until the pink disappears.
  2. Add the onion, zucchini, red bell pepper, garlic, and fresh ginger. Allow the small pieces to become tender.
  3. Stir in the toasted sesame oil.
  4. Introduce the cauliflower. Drizzle an ample amount of coconut aminos over the top of the goulash and stir.
  5. Cook long enough for the flavors to marry.

Kebab-bab-babbing along...


Here in Idaho, the weather is windy, dry, and hot. Besides wishing that I could return to sunsuits, I am on a serious, and I mean SERIOUS, kebab kick! I cannot get enough! I even daydream about my next set of skewered sumptuousness! Even though our old barbecue is falling apart, Barry is not deterred! He creates something new and then babies those kebabs over just the right amount of heat.

We have had strip steak, chicken breasts, and shrimp thus far. (Pork sirloin is on the menu for this weekend.) The vegetables vary, but we never seem to omit the cherry tomatoes because they pop with flavor. I love the way juicy, crispy, savory, and sweet marry over the flames. And we must not forget the freshly chopped herbs sprinkled on top.

Getting Spicy | Sumac


My husband, Barry, enjoys cooking low-carb breakfasts! He has customers who fill his empty cartons with fresh eggs from their own chickens! We are happy recipients! Yet, Barry does have a bad habit of not telling me when he has used the last of something. Today, I had butter melting in a pan only to discover that we were out the eggs!  

Accepting that my fried eggs and cream cheese would have to wait, I shifted gears. (I'm well-practiced!) The butter was sizzling, so I grabbed what we had: celery, a yellow bell pepper, onions, and natural beer bratwurst. 

I used Sumac—from Trader Joe's The Spice Route—to season my pan-fried dish. Sumac is often sprinkled on top of hummus. Its tart flavor makes it an excellent replacement for lemon. With a little Maldon salt and some chopsticks, I had a sumptuous feast!

Betty Botter



Butter and I go way back! I enjoyed it long before I was a low-carber. (I detested its plastic imposter.) I never want to how many slices of white bread I lavished with this fatty goodness! 

Well, as a young teen, I was babysitting. The kids were taking a nap, so I memorized this tongue twister. The ingredients of my batter have changed, but the butter is better than ever!


Betty Botter bought some butter;

“But,” said she, “this butter’s bitter!

If I put it in my batter,

It will make my batter bitter;

But a bit of better butter

Will but make my batter better.”

So she bought a bit of butter,

Better than her bitter butter,

Put it in the bitter batter,

Made her bitter batter better.

So ’twas better Betty Botter

Bought a bit of better butter.
